Dream come true! Last year one of my New Year Resolutions was to get on TV so that more people could get turned on to my 3in3 recipe ideas. I wanted them to see, with their own eyes, just how quick and simple it is to get great, healthy food on the table in just 3 minutes. Well….today is the big day.

The next challenge was to decide which of my hundreds of recipes I should feature. Nothing to fear. As often happens in life, things line up and the answers appear. Two weeks ago got invited to a party at Vicki Honeyman’s. She asked me to bring the main dish for 16 people. As usual, I was short on time. Took a quick look at my list of 3in3 recipes. This one, inspired by my friend Kasey Passen, jumped out at me like a flying fish in Barbados.

Needless to say, the crowd at the party went wild! I rarely get to cook for 16 people so hearing the oohs and awes confirmed that this recipe was a winner.

OK. I have to run and get ready for the show.

Pasta with Tuna (or Salmon), Spinach and Capers

1 bag (10 oz.) Al Dente BonaChia® Pasta

3 Tbs. extra virgin olive oil

1 clove of garlic, minced

5 oz. fresh spinach (or arugula)

6 oz. Wild Caught Alaskan Sockeye Salmon ( Wild Planet products are canned fresh, never frozen)

2 tsp. capers

1/3 cup Parmesan, freshly grated

lemon zest and juice of one lemon

1/2 tsp. kosher salt*, not including the salt used for the pasta cooking water

Bring a pot of salted water to a boil then add the pasta. In the meantime, put the oil and garlic in a large skillet over low heat. Flake in the the fish, heating gently. Sprinkle with 1/2 tsp salt.  Add the capers and spinach. Before draining pasta, ladle approximately 2/3 cup pasta cooking water to skillet over the spinach.  Drain the pasta and add it directly into the skillet. Toss to wilt the spinach.  Grate lemon zest over pasta then squeeze the lemon juice and stir. Add Parmesan cheese, salt and pepper to taste. Enjoy!

*measurement based on Morton’s Coarse Kosher Salt.

PS. Kasey, I LOVE the roasted turnips you put in the recipe, but only have 3 minutes to prepare the dish so need to omit this time.)
