I’ve always given credit where credit was due. Marcella Hazan is the reason that our pasta cooks in 3 minutes and tastes just like homemade. When I met with Marcella and her charming husband in their New York City apartment¬† in 1980, she generously gave me a crash course in pasta making. Over the past 32 years, we have never strayed from her advice. Roll the pasta out! Roll it over and over again! Time consuming…..yes! But the only way to get the homemade texture that has made Al Dente Pasta. That’s what Marcella said.
