pasta salad with cucumbers and peas
A quick and cool pasta salad for those hot summer days

- 10-12 oz Al Dente Linguine (BonaChia, Whole Wheat, Egg or Spicy Sesame)
- 10 oz frozen peas
- 2 cucumbers, halved, seeded and cut into half moons
- 1/2 cup favorite bottled salad dressing (I used Lemon Ginger Vinaigrette)
- 1/2 cup toasted almonds, if desired for garnish
Place peas in colander. Place cucumbers over the peas and salt the cucumbers. Place a plate over the cucumbers, with the jar of salad dressing on top, while pot of water is coming to a boil. Cook pasta for 3 minutes. Drain over the cucumbers and peas. If serving as a salad, rinse with cold water. Toss all together with the dressing and the almonds.
Test for seasoning.
