lemon pepper carba-nada with spinach and artichokes

Ingredients

  • 12 ounces Al Dente™ Pasta
  • 1 Tbsp. olive oil
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 can artichoke hearts, chopped
  • 1 cup vegetable or chicken broth
  • 10 oz. coarsely chopped fresh spinach
  • 1 pint cherry tomatoes, halved
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup sliced black olives
  • 1 cup feta cheese
  • 1/4 cup sliced scallions

Directions

1.In large non-stick skillet, saute garlic & onion in olive oil until soft. Add broth to skillet, cooking until reduced by half. Add spinach, tomatoes & artichoke hearts until spinach is wilted.

2.Cook pasta in boiling water for 3 minutes, until tender but firm. Add to skillet with spinach mixture & toss with olives, almonds, feta & scallions.
