Ingredients

  • 1 bag Al Dente Whole Wheat Fettuccine
  • 2 Tbsp olive oil
  • 5 slices turkey bacon, cut into 1/2 slices
  • 2 red peppers, diced
  • 1 onion, diced
  • 2 cups broccoli florettes
  • 1 cup chicken stock
  • 1/2 cup parmesan
  • 1/2 c pinenuts

Directions

Saute turkey bacon in olive oil until almost cooked.  Add onion, then peppers and broccoli.  Sauteing until onion is soft and broccoli is bright green.  Add stock.  Bring to boil, then cover and reduce heat, cooking for 5 min.  Cook pasta and drain.  Add pasta to sauce.  Add cheese and pinenuts to garnish.   Salt and pepper to taste.
