TexMex Pasta Salad
Perfect for a picnic, party or potluck!

- 1 bag Al Dente® Spinach Fettucine or BonaChia® Spinach
- 1 can black beans, drained and rinsed
- 10-16 oz. frozen corn
- 1 red bell pepper, diced
- 1/2 cup olive oil
- 1/2 cup fresh MI made salsa
- 1 lime
- 1 tsp. coarse kosher salt
In large serving bowl, mix olive oil, fresh MI made salsa, salt and juice and zest of lime. In colander, drain black beans. Open bag of corn and place in colander along with beans. Cook Pasta in large pot of boiling, salted water for 3 minutes. Drain in colander over the corn and beans. Rinse with cold water. Toss pasta, corn, beans, sweet red pepper in bowl. Season to taste.
Garnish with pumpkin seeds or sunflower seeds, if desired.
P.S. If you are not using Coarse Kosher Salt, then you would use more like 1/2 tsp. of salt.
