We are big on 3’s. Al Dente Pasta cooks in 3 minutes. This is our 30th year in business. And now, we will post a 3 ingredient pasta recipe every Thursday, so that we will have 30 recipes by the time we turn 30 this summer.
Sometimes they will be my own quick recipes, but not always. Next week, the amazing Bad Fairy and Wonder Woman (Bonasera Secret Supper Club) will share their latest pasta creation.
Ground Rules for 3 Ingredient Recipe
Exemptions: The pasta, the seasonings (salt, pepper, herbs), the base (olive oil, cream, stock), the cheese, the garnish.
Directions: Recipe should be written specifically for either 1/2 bag (approx 6 oz.) or a whole bag (12 oz.) of pasta. Suggestions and alternatives can be included.
Photos: Either a photo of the raw ingredients, including the bag of pasta, and/or a photo of the plated or cooked dish.
Monique’s Low Fat Veggie Alfredo

Ingredients
12 oz. Al Dente Pasta
3 cups broccoli florettes
1 onion, small chunks
2 sweet red peppers, sliced
2 Tbsp. Olive Oil
1.5 cups Half and Half
3/4 cup Parmesan Cheese, grated
salt, pepper
optional garnishes and additions: toasted pinenuts, chopped herbs, cooked sausage.
1. Bring a large pot of salted water to a boil.
2. Add olive oil to large skillet and saute the onion and sweet pepper until soft. Salt and pepper. Add half and half to skillet, heating gently.
3. Cook broccoli and pasta in boiling water, testing pasta after 3 minutes. Drain when done.
4. Add pasta, broccoli and cheese to skillet, stirring all until heated through. Season to taste.

Here I added some cooked chicken sausage. Enjoy!
