You may think I am referring to the spinach, but really our newest “ingredient” is Kate Grimaldi. Standing just 5 feet tall, don’t let her small size fool you! University of Michigan student-athlete, she is a dynamo in more ways than one. Majoring in Communications, her plan is to help me get the word out about our new BonaChiaโข Pasta. To top things off,ย she is 50% Italian and can never get enough pasta! The absolute perfect intern!
To demonstrate how simple it is to get a healthy pasta dish on the table in 3 minutes, here is what I cooked up for her.ย She says that this style of cooking is going to change the lives of her teammates. That’s what I love….changing lives!
BonaChiaโข Pasta for One
Yield: 1 serving
Ingredients:
Handful of Al Denteยฎ BonaChia Pasta (1/4 bag).
1 tablespoon extra virgin olive oil
Handful of baby spinach (pre-washed, rough chopped)
1 roasted red pepper from a jar (chopped)
Handful of chopped walnuts
ยผ teaspoon coarse salt (do not use fine table salt)
Instructions:
1. In a beautiful bowl, start with one tablespoon of extra virgin olive oil. Add rough chopped spinach, chopped red pepper, toasted walnuts, and minced garlic. Toss.
2. Bring a pot of salted water to a boil. Add pasta.
3. Using a small ladle, scoop out 1/4 cup of the pasta water and add to the spinach bowl. Toss.
4. Drain pasta, add to the spinach bowl, and toss all together. Add a little cracked pepper for some flavor and bon appetite!
