Just got a message from someone who lives in NYC. He just bought a bag of Spinach BonaChia Fettuccine at his local WholeFoods. He let me know that his apartment is really small and he only has one pot, one bowl and that’s about it.

Pasta with Cauliflower, Golden Raisins and Walnuts

serves 4 as a main dish, 8 as a side dish.

1 bag (10 oz) Spinach BonaChia Fettuccine

1 head of cauliflower, chopped into 2 inch florettes

3/4 cup walnuts, rough chopped

3/4 cup golden raisins

1 clove garlic, minced

3 Tbsp. olive oil

1/2 tsp. coarse kosher salt. (more salt is needed for the cooking water)

Directions

In a bowl put the walnuts, olive oil, walnuts, garlic, raisins and 1/2 tsp. salt. Bring a large pot of salted water to a boil. Cook pasta and cauliflower together for 3 minutes. Before draining pasta, ladle 1/2 cup of hot cooking water into bowl and stir. Drain pasta and cauliflower. Toss all together in bowl. Season to taste with salt and fresh ground pepper. Optional additions include feta or parmesan, chopped fresh herbs like parsley or basil.
