Asparagus is in season right now and it’s so good and fresh tasting.  I had to share a recent weeknight dinner pairing asparagus with Al Dente Pasta.  Enjoy!

 

 

Asparagus Carbonara

1 bag Al Dente BonaChia Fettuccine, or any other cut or flavor

1 bunch asparagus, tough part of stems snapped off

1/2 lb bacon, or turkey bacon

1/3 c parmesan cheese, grated

lemon slices to garnish, if desired

salt and pepper to taste

Directions

Cook bacon, drain on paper towels, and crumble into bite sized pieces.  Cut asparagus in bite sized pieces.  Cook pasta and cut asparagus at the same time in boiling salted water for just 3 minutes.  Reserve 1/2 cup of cooking liquid.  Drain pasta and asparagus, place in serving bowl, add cooked bacon and Parmesan. Toss pasta.  Add a little of the pasta water to moisten if desired.  Season with salt and pepper.  Garnish with lemon.
