Red Lentil Pasta with Veggies and Pink Sauce

Ingredients
  

  • 1 bag Al Dente Red Lentil + Sweet Potato Pasta
  • 1 cup broccoli
  • 1 cup spinach
  • 1/2 cup tomato paste
  • 1/2 cup coconut milk

Instructions
 

  • Cook pasta according to package directions.
  • In a separate pan, steam the broccoli, mushrooms, and spinach until tender.
  • Add tomato paste and coconut milk to veggies, salt and pepper to taste.
