Red Lentil Pasta with Veggies and Pink Sauce
- 1 bag Al Dente Red Lentil + Sweet Potato Pasta
- 1 cup broccoli
- 1 cup spinach
- 1/2 cup tomato paste
- 1/2 cup coconut milk
- Cook pasta according to package directions.
- In a separate pan, steam the broccoli, mushrooms, and spinach until tender.
- Add tomato paste and coconut milk to veggies, salt and pepper to taste.
