Since we already had pasta that was creamy, this time, I seasoned it with @bigsursalts Galivรกn Salt and @thequailandolive Lemon olive oil๐Ÿ‹๐Ÿ‹๐Ÿ‹

As we know spinach and avocado are loaded with goodness so why not to combine them together and make some quick, healthy and delicious pasta. This vegan pasta is absolutely easy to make and would be loved by your picky eaters too๐Ÿ˜Š 

In this recipe, I used pasta from @aldentepastaco which is a ๐œ๐ž๐ซ๐ญ๐ข๐Ÿ๐ข๐ž๐ ๐จ๐ซ๐ ๐š๐ง๐ข๐œ, ๐ฉ๐ฅ๐š๐ง๐ญ ๐›๐š๐ฌ๐ž๐, ๐ ๐ฅ๐ฎ๐ญ๐ž๐ง ๐Ÿ๐ซ๐ž๐ž, ๐†๐Œ๐Ž-๐Ÿ๐ซ๐ž๐ž, ๐ก๐ข๐ ๐ก ๐ฉ๐ซ๐จ๐ญ๐ž๐ข๐ง pasta. This pasta cooks in just 3 minutes so definitely a worth adding healthy deliciousness to busy days meal. They have different varieties of plant based pasta for your taste and lifestyle. ๐‘๐ž๐œ๐ข๐ฉ๐ž ๐ข๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ
3 cups of Pasta from @aldentepastaco 
1/4 cup cashews (soaked for 30 mins)
1 ripe avocado 
2 cup of fresh spinach 
6 cloves of garlic 
1 spicy green chili (optional ,as per taste)
1 tbsp lemon juice
2 tbsp nutritional yeast (for cheese flavor) 
Salt as per taste
Paper as per taste
Italian seasoning 
Few chopped Walnuts 

๐Œ๐ž๐ญ๐ก๐จ๐ :
1. Cook pasta as per the instructions on the package.
2. For pasta sauce, blend all remaining ingredients until it forms smooth creamy sauce.
3. Toss cooked pasta with pasta sauce. Add sufficient pasta cooked water to make right consistency.
4. Add your favorite cooked veggies such as mushroom, peas or cauliflower. Add paper, salt and Italian seasoning.
5. Mix it well so all pasta would get nice flavor of green sauce.
6. Serve warm with some chopped walnuts on top and enjoy.

We all know we are supposed to try and eat less meat. This recipe from @midwest.foodie of Vegetarian Bolognese caught my eye because I love bolognese and I love quinoa. Bring it! My one note would be to be generous with the parm, and get your hands on a parm rind, as well. But, thatโ€™s me...I like it cheesy. I served ours over @aldentepastaco Pappardelle pasta because I wasnโ€™t sure how my kids would like this, but they love anything served over this pasta! #copycatchef_ct ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ

INGREDIENTS
* 2 tablespoons olive oil
* 1 yellow onion, diced
* 1 cup finely chopped celery
* 1 cup finely chopped carrots
* 4 cloves garlic, minced
* 3/4 cup toasted, finely chopped walnuts
* 1/3 cup uncooked tri-color quinoa
* 1/2 cup freshly grated Parmesan cheese + more for garnish
* 1/2 cup red wine
* 1/2 cup whole milk
* 28 oz. can crushed tomatoes
* 28 oz. can whole San Marzano tomatoes
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 teaspoon dried oregano
* Kosher salt
* fresh cracked pepper
* Parmesan rind 
Directions:
Heat oil in a large pot over medium high heat. 
Add onion, celery, and carrots along with a large pinch of salt and pepper. Cook, stirring occasionally for 10 minutes. 
Add garlic, thyme, rosemary, and oregano and cook for 1 minute, stirring frequently. 
Add red wine and deglaze the pot, scraping all the yummy bits off the bottom.
Add crushed tomatoes to the pot.
Then add whole San Marzano tomatoes, crushing them with your hands as you add them. 
Add whole milk, chopped walnuts, Parmesan, and uncooked quinoa along with a couple large pinches of salt and pepper.
Bring to a simmer over medium high heat. Add Parmesan rind. 
Cover and reduce heat to medium low. Simmer, covered, for 30 minutes. 
Serve with spaghetti noodles and garnish with chopped parsley and grated Parmesan cheese

I started cooking this dish in โ€˜17 from @spendpennies post my mom sent me on Facebook. 
I loved it. 
I wanted to see if it stood up being plant based & oh. my. lanta., yโ€™all. 
This is one of my favorite things I have ever cooked. It will become a staple in my home. Easy w/ lots of left overs, better cold than hot (almost never say that) & it can be different every time. 

Youโ€˜ll want: 
๐Ÿงˆ1/4 cup butter. I love @miyokoscreamery #soyfree
๐Ÿฅฌ #cabbage
๐Ÿœ #noodles. I love using plant based because they + more flavor, veggies, color & nutrients! First time trying @aldentepastaco , highly recommend. 
๐Ÿ…๐Ÿฅ•๐ŸŒฝ๐Ÿฅฆ๐Ÿ†๐Ÿง… veggies! I used: radish, onion, Brussel sprouts & bell peppers. I love crunchy things. Frozen/canned work too!
๐Ÿง† #sausage @fieldroast is superior w/ #NOSOY! This is important especially for #woman. Lower ur soy intake. Please do some research on this for yourself. It is crucial to our #healing (Iโ€™ll share more in later weeks). 
๐Ÿง€ @goodplanetfoods parmesan is an unneeded bonus! 

#Easy :
๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณmelt butter in a big pot/pan
๐Ÿœcook noodles separately, drain & set a side
๐Ÿ‘ฉ๐Ÿปโ€๐ŸŒพcut your #cabbage (save 2-4 whole leaves for wraps in other meals), mix it in the #butter making sure all cabbage gets a nice layer. If you have to, + more. 
๐Ÿง‚season: salt, pepper, garlic, cayenne are my go tos. 
๐Ÿง†cook the โ€œsausageโ€. Flipping it every few minutes. Keep it covered the first 3-5 min. 
๐ŸŒถ+ veggies. Freshly cut, from a can or freezer! Everything works. As many as you can. Having a variety of textures & colors make it fun to eat your nutrients. Variety is the spice of life! 
๐Ÿ‹special trick w/ Brussel sprouts (& kale), season them in @tessemaes lemon garlic dressing before + them to the pot! 
๐Ÿœ๐Ÿง†+ noodles & the cut up sausage
 ๐Ÿฝplate w/ parmesan & a lil more seasoning if needed. 
๐Ÿคค enjoy for DAYS.
