#CarbaNada from @aldentepastaco is going to be a YES from me! Shout out to @madelinekulose_ww for making my dreams come true and giving me the chance to try this 3 point pasta miracle. After I boiled the pasta I cooked it with a little olive oil, garlic, cherry tomatoes, baby kale, fat free feta, and balsamic glaze. This bowl is 5 points for lunch, and so delicious! I can’t wait to make pasta again 🍝

Dinner Tonight: Pepperonchinis Roast with Roasted Garlic Carba-Nada Fettuccine and Roasted Cherry Tomatoes 🤤

I made that amazing roast again. This time I didn’t have the Au jus packet but it came out delicious replaced with beef broth.
.
I heavily seasoned 1 small roast with salt and pepper and browned it in a skillet till browned all over.
.
Put it in the instant pot.
Add 1 packet of ranch dressing mix
1 jar of pepperonchinis with half the juice
1 cup of beef bone broth
A splash of Worcestershire
Onion salt
Garlic salt
.
Cover with the lid and put it on stew for 90 minutes.
.
Remove the roast and shred.
.
Turn the sauté function on and whisk in 1/2 a teaspoon of xanthan gum.
.
I added half a package of @aldentepastaco carba nada roasted garlic fettuccine to the simmering broth for 3 minutes and toss back in the meat. I left a little out for another meal. I toasted some asparagus for a side and cherry tomatoes so I tossed a few into the pasta.
