Garlic Butter Shrimp Pasta

Ingredients
  

  • 8 oz garlic parsley fettuccine
  • 1 lb medium shrimp peeled & devenied
  • 8 tbsp unsalted butter divided
  • 3/4 cup red bell pepper medium diced
  • 3 cloves garlic
  • 1/2 tsp oregano dried
  • 2 cups spinach
  • 1/2 tsp red pepper flakes
  • 1/2 cup parmesan freshly grated
  • salt & pepper

Instructions
 

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain and set aside
  • Season shrimp with salt and pepper, to taste; set aside
  • Melt 2 tablespoons butter in a large skillet over medium high heat. Add bell peppers, garlic, oregano and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes
  • Add shrimp and cook, until pink on both sides, about 2-3 minutes; set aside
  • Melt remaining 6 tablespoons butter in the skillet. Stir in pasta, spinach and Parmesan until for 2 minutes. Stir in shrimp
  • Serve immediately and enjoy!
