Recipe of the day! Red Lentil + Sweet Potato pasta

Recipe of the day! Red Lentil + Sweet Potato pasta salad with Arugula and roasted cherry tomatoes - adapted from @acozykitchen

INGREDIENTS
-8 oz bag of Red Lentil Sweet & Potato pasta
-1 small onion, chopped
-3 garlic cloves, minced
-½ tsp crushed red pepper flakes
-22 oz cherry tomatoes, halved
-2 TBSP butter (if vegan, use plant-based alternative like Earth Balance)
-½ cup fresh arugula
-parmesan cheese, for serving (optional)

INSTRUCTIONS:
Boil well-salted water for pasta. Cook to al dente, and then drain, reserving ½ cup of the pasta water.
Heat 2 tbsp olive oil in skillet. When oil is warm, add diced onions and let cook for 5-7 minutes, or until translucent.
Add minced garlic, red pepper flakes, and tomatoes, and cook for an additional 5 minutes or so. The tomatoes should be softened and release juices in the skillet.
Add pasta water to tomato and onion mixture, and bring to a simmer. Stir in the pasta and butter, and top with arugula. Serve with parmesan cheese, if desired. Enjoy!

What's for dinner? Pasta with Roasted Corn & Goat Cheese!

INGREDIENTS
3 cups frozen corn thawed
3 tablespoons olive oil divided
1 teaspoon chili powder
1 teaspoon ground cumin
1 tsp kosher salt
14 oz Al Dente Spinach Farfalletti , cooked according to package instructions then cooled to room temp
2 yellow or red bell peppers cored and diced
1/2 medium red onion diced
2 jalapeños; cored, seeded, and finely diced
1 bunch cilantro, minced (leaves only)
16 oz cherry tomatoes, halved
2 limes zest and juice
10.5 oz crumbled goat cheese

INSTRUCTIONS
1. Heat ½ tablespoon olive oil in a large skillet over medium heat. Once oil is hot, add the thawed corn, chili powder, ground cumin, and a healthy pinch of fine sea salt and pepper then stir to coat using a wooden spoon. Cook, stirring occasionally, until corn is slightly charred – about 6-8 minutes. Remove from heat then allow corn to cool slightly.
2. Add cooked pasta, bell peppers, onion, jalapeños, cilantro, cherry tomatoes, lime zest and juice, goat cheese, remaining 2 tablespoons olive oil, and cooked corn to a large mixing bowl. Toss until well combined then season with sea salt and black pepper to your liking… enjoy!

Vegetarian Bolognese with Mushrooms

INGREDIENTS:
1 bag Golden Egg Pappardelle Al Dente pasta
3 tbsp olive oil
1 lb sliced mushrooms
1 jar Marinara Sauce
Parmesan cheese and basil for garnish
Salt and pepper to taste

INSTRUCTIONS
Saute mushrooms in 3 Tbsp of olive oil, until carmelized.
Add salt and pepper, to taste. Add jar of sauce to skillet. Cover.
While sauce simmers, cook Al Dente Golden Egg Pappardelle Pasta for just 3 minutes. Drain pasta and toss with sauce.
Top with parmesan cheese and basil, if desired and enjoy!
